The History of Neapolitan Pizza

The history of Neapolitan pizza did not begin in royal palaces, but in the bustling, narrow streets of Naples.

For the local workers, known as lazzaroni, time was precious and money was scarce. The need for something tasty, filling, and quick to eat – a simple dough topped with lard, garlic, and salt – gave birth to modern Neapolitan pizza.

THE BIRTH OF THE PIZZA

Everything changed when the tomato arrived in Europe from the New World. Adding it to the dough was a game-changer. The balance between sweetness and acidity breathed new life into the warm slice of “flatbread,” and the rest is simply history.

1889

THE BIRTH OF MARGHERITA

King Umberto I and Queen Margherita of Savoy visit Naples. Curious to try the food everyone is talking about, the queen invites the city’s most famous pizzaiolo – Raffaele Esposito.

He prepares a brilliant combination that reflects the colors of the Italian flag:

Red: juicy San Marzano tomatoes; White: fresh mozzarella; Green: fragrant fresh basil.

The European Union has officially registered Neapolitan pizza as a product with TSG (Traditional Speciality Guaranteed) certification, which protects the recipe and preparation method regardless of where in the world it is made.

UNESCO HERITAGE

The Art of the Neapolitan Pizza Maker (L’Arte dei Pizzaiuoli Napoletani) has been inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity.

This traditional, artisanal technique has ensured the richness and quality of Neapolitan pizza-making over the centuries.

Ingredients

Made with Type 00 flour, sea salt, premium tomatoes, and fresh mozzarella.

Hand Technique

Hand-stretched only, in the old Neapolitan style – to keep it airy and light.

The Oven

We bake the pizza for between 60 and 90 seconds at a temperature of nearly 500°C in an authentic oven built from Biscotto di Sorrento bricks – handcrafted from volcanic clay at the foot of Mount Vesuvius.

What makes a pizza authentic?

Our pizza isn’t unique. You can find pizza just like ours in other places around the world. For example, in Naples.

There, they make it exactly the same way we do here in Sofia. Flour, yeast, sea salt, and water. Nothing more, nothing less.

The Dough

Type 00 flour, pure water, yeast, and sea salt. We knead it by hand only to keep it light and airy.

Top-quality tomatoes from the Campania region of Italy.

We bake at nearly 500°C in an authentic oven built from Biscotto di Sorrento bricks – handcrafted from volcanic clay at the foot of Mount Vesuvius.
